One of the most famous and popular teas in China, the story of this tea concerns a humble farmer who one day discovered a derelict shrine to Guan Yin, the Bodhisattva of Compassion, on the periphery of his land.  He cleaned out the shrine and scoured clean the rusted old iron idol of the Bodhisattva, returning regularly to offer flowers and incense to the Guan Yin.  One day the Bodhisattva appeared to him in a dream, telling him that she has prepared a gift for him to reward him for caring for her shrine.  She instructed him to look in the mouth of the cave behind the shrine.  Sure enough, the farmer went to where she had described and he found a tiny tea plant struggling to survive.  He cleaned the weeds and debris from around it and returned regularly to water it.  Soon it had grown into a stout, robust tea plant with distinctively thick , heavily serrated leaves.  This is the origin of the Tie Guan Yin variety, famed for its fragrance and exquisite flavor.  Our Tie Guan Yin 铁观音 the “Iron Bodhisattva of Mercy”, is sourced from the highest peaks of Anxi County and processed by the Hou family of Longmen, Fujian.  This low-oxidation “jade” oolong has become renowned for its exquisite floral fragrance, delicate taste and ease of brewing, and is popularly given as a gift throughout china.  The lightly oxidized, hand-rolled leaves unfurl slowly as they steep to produce a jade-green elixir with a delicate flavor and a heady perfume reminiscent of fresh honeysuckle.
